Ghevar Recipe: Ghevar is very much liked as a sweet on the occasion of Rakshabandhan festival (Raksha Bandhan 2023). In many areas, Ghevar is recognized as a traditional Raksha Bandhan sweet. Crisp and netted ghevar is so tasty that one feels like eating it. When sisters tie Raksha Sutra to their brothers and sweeten their mouth too, many types of sweets are prepared for this at home. Ghevar is also included in that list which is eaten with great enthusiasm.

Ingredients to make Ghevar
Maida – 2 cups
Milk cold – 1/2 cup
Lemon juice – 1 tsp
Dry fruits – 1 tbsp
Cardamom powder – 1/4 tsp
Desi ghee – 1/2 cup
Sugar – 1 cup
Ice cubes – 1 tray
Cold water – 3-4 cups
Ghee/Oil – for frying

How to make Ghevar
To make delicious sweet ghevar, first of all put desi ghee in a big bowl and put an ice tray (about 8 to 10 pieces of ice) inside it and start rubbing. Ghee has to be rubbed until it becomes thick and creamy. When the ghee starts to look white, stop rubbing and add 2 cups of all purpose flour to it and mix it well. Keep in mind that the flour should not be kneaded like flour, but should be crumbled.

After this add half a cup of cold milk to the flour and mix. Then add one cup of cold water and prepare a thick batter. After making a thick solution, add one more cup of cold water to it and then whisk it for at least five minutes. After 5 minutes, add one teaspoon of lemon juice and one cup of cold water to the solution and mix it again. When all the lumps inside the flour are gone and the batter becomes smooth, stop beating.

Now put desi ghee in a pan and heat it on medium flame. If you want, you can also use oil. After the ghee is heated, place the ring in the middle of it and when the ghee starts boiling, pour 2 tbsp solution from above, keeping a distance. Its solution will disintegrate, in the same way add 2 tablespoons of flour solution 10 to 15 times while making distance. During this, keep the gas on medium flame only.
Now fry the ghevar until its color turns golden brown. After this take it out in a plate. In the same way keep preparing ghevar one by one from all the batter. After the Ghevar is ready, put sugar and water in a vessel and heat it and prepare the syrup. When two strings of syrup start to form, turn off the gas. Now put the prepared ghevar in the syrup and soak it for half an hour so that the ghevar can drink the syrup properly. After this, garnish with chopped tri-fruits and serve on ghevar.
